Ravioli
Recette:
Pâte:
500g de farine + c à c de sel+ 5 œufs
Farce:
oignon haché+250g de viande haché+ basilic+ romarin + sel+ poivre
Sauce:
tomate fraiche pas trop cuite et haché+ vinaigre+ sel+ 2 gousses d'ail+ basilic

Ravioli recipe:
Ingredients:
For the paste/ dough: (for ravioli and lasagna)
- 500g of flour
- 5 eggs
- 5 tablespoons of olive oil
For the farce/ filling
- 200g Basil
- 400g ricotta cheese
- 100g different cheese (Parmesan, mozzarella…)
- salt
For the garnish: fresh tomato sauce
- 500g tomato
- Basil
- 3 tablespoons of vinegar
- Salt
- Fines herbs
How to make the dough?
Crack the eggs into a small mixing bowl and beat them with a fork, add oil and mix
Put the flour on a large mixing bowl, add the eggs and mix them with your hand, knead the dough until smooth
Put the dough in a cellophane (wrap it) and put it in the freezer for one hour.
How to make the filling?
In a large mixing bowl add the ricotta and the rapped cheese (parmesan, cheddar, mozzarella…) mash with a fork. Add the 2 eggs beaten eggs
Mix the ingredients until you have a smooth and thicken filling
Cover the bowl with a plastic wrap and place it in the freezer, allow to cool 30min
How to make the tomato sauce?
Place the cleaned tomatoes on the saucepan and cover the pan. Put/ cook it over a low heat for 10 min, Tomatoes should not be overcooked.
Than place it on a blade mixer, mix it until you have a tomato sauce, pay it on the pan,
Back to the cooking, and so add the vinegar, the basil, the salt, and the fines herbs, for 10 min at most.
Now clean off a large work surface and dust it with flour
Cut the dough into two parts
Roll out them to a thickness of 0.4 cm
Place equidistantly a tablespoon of the ravioli filling on the first part then moisten the edge between the fillings with water
Put above thoroughly the other part of the dough
And cut your ravioli us you like them into circles or squares (will make about 15 dough circles)
If you dispose of the ravioli maker just do the same thing with the maker
Cooking:
Place the ravioli in boiling water for 5 min (until they float)
Present it with the tomato sauce and salad
